
彭吉星,男,1987年7月生人,于2015年6月獲中國海洋大學(xué)藥物化學(xué)專業(yè)博士學(xué)位,現(xiàn)任中國水產(chǎn)科學(xué)研究院黃海水產(chǎn)研究所助理研究員。主要從事水產(chǎn)品營養(yǎng)品質(zhì)評價(jià)與功能產(chǎn)物等方面的研究,主持或參與課題10余項(xiàng),包括國家重點(diǎn)研發(fā)計(jì)劃子課題,國家自然科學(xué)青年基金,山東省自然科學(xué)青年基金,農(nóng)業(yè)行業(yè)標(biāo)準(zhǔn)項(xiàng)目等。發(fā)表SCI論文20余篇,其中第一或共一作者8篇。獲發(fā)明專利5項(xiàng),軟件著作權(quán)2項(xiàng),參與制修訂國家及農(nóng)業(yè)行業(yè)標(biāo)準(zhǔn)5項(xiàng),1篇信息建議獲全國政協(xié)每日社情采用。

主要研究內(nèi)容、研究方向
主要圍繞水產(chǎn)品營養(yǎng)品質(zhì)評價(jià)與功能產(chǎn)物開展以下研究:① 水產(chǎn)品營養(yǎng)組分檢測與評價(jià)標(biāo)準(zhǔn);②水產(chǎn)品特征功能成分挖掘與構(gòu)效關(guān)系;③水產(chǎn)品品質(zhì)形成(保持)機(jī)理與調(diào)控技術(shù)。研究團(tuán)隊(duì)已構(gòu)建了氨基酸、維生素、核苷酸及有機(jī)酸等水溶性營養(yǎng)物質(zhì)的高通量精準(zhǔn)液質(zhì)分析方法,系統(tǒng)開展牡蠣、扇貝和鮑等重點(diǎn)養(yǎng)殖貝類的營養(yǎng)品質(zhì)評價(jià);建立基于高分辨質(zhì)譜的非靶向/靶向代謝組學(xué)技術(shù)平臺,開展了不同產(chǎn)地、品種以及環(huán)境脅迫對水產(chǎn)品的營養(yǎng)品質(zhì)影響機(jī)制研究。
